His career includes working alongside James Beard Award–winning chefs, training in Michelin-starred kitchens, and cooking across Europe, Asia, and Mexico. Chef Mer builds dishes with intention, using spice, aromatics, and technique to tell stories through flavor.

His latest venture, Indgō MRKTŌ, is a chef-driven hybrid market inspired by open-air stalls and neighborhood food culture across Mexico and Asia. The concept blends creativity with authenticity, highlights local farms and ingredients, and celebrates community.
